Living in the country of bread and cheese can be difficult if you are on the paleo diet, so we started experimenting in our kitchen to see if we could make a paleo style bread. In our humble opinion, we believe it was a huge succes!
Below the recipe and also the locations on where to get the ingredients.
5 eggs (Both Aldi & Dirk van den Broek sell the best priced organic eggs)
60 grams of psyllium husk* (sold at the Volkskruidentuin, look for this pakage)
40 grams of flaxseeds (sold at De Tuinen, EkoPlaza or get it online)
100 grams of sunflower- & pumpkinseed mix (sold at de De Tuinen, EkoPlaza)
3 tbsp olive oil (local supermarket)
1 tsp baking powder (at EkoPlaza or online)
1 tsp baking soda (at Dun Yong)
1/2 cup of coconut milk or water
1/4 tsp salt
* The opinion on psyllium husk being paleo is 50/50. Personally, we think it's a good alternative, and better than the other gluten free options, such as corn starch.
Pre-heat the oven to 170C. Mix the dry and wet ingredients well, scoop the mixture into a loafpan. The mix can seem a bit dry, but it will rise during baking. Bake for about 55 mins.
